Microbial ecology and the food microbiome have gained great interest as it has been shown to be a key factor in food safety. The food microbiome is not static but rather dynamic and is affected by several factors. The food microbiome can be influenced by processes such as cooking, preservation, processing, production, storage, and consumption. The influence of the food microbiome in the food safety process can be linked to a number of human and animal diseases such as obesity, diabetes, and inflammatory bowel disease. As food safety is a multidisciplinary field, the contribution of microbial ecology in developing improved intervention strategies and new molecular methods for monitoring of the food microbiome has become crucial. This review will summarize the current evidence of the impact of the food microbiome on food safety and also on emerging technologies used for characterization of microbial ecology. is not limited to the three-dimensional distribution of the atoms or molecules; and the matrix can be an array of ion traps, for example, or of a phase change material, or of a charge detector, as used in a mass spectrometer.
The patterning of an ionized sample can be accomplished by two different approaches. The first is mass spectrometry with or without prior ionization. Alternatively, a set of ions of the desired species can be ionized directly, and the individual species can be identified by mass. The approach can be done in a stepwise fashion, or in a massively parallel fashion. In the massively parallel fashion, a large number of parallel mass spectrometer channels are used to analyze a sample. The channels can be prepared in different configurations, including by laser ablation and/or by CVD. In some cases, the channels are created on the substrate in which the patterning is to be done. For example, a substrate with pre-defined holes, including nanofabricated holes, can be placed over the material to be patterned.
